The easiest and most delicious banana bread you need to make! Only 5 ingredients and minimal dishes to clean afterwards. I made ours Gluten free and dairy free. Ingredients: 2 cups rolled oats (certified GF oats if needed) 1/2 tsp baking soda 2-3 over ripe bananas (or more if they are small) 2 eggs 3-5 Tbsp Maple Syrup Chocolate Chips or Nuts as desired (maybe even some pumpkin spice) Directions (Preheat oven to 350* F) 1. Blend oats and baking soda in blender until it makes a flour. Transfer flour to mixing bowl. 2. Blend bananas, eggs, and maple syrup until very smooth, Pour over flour and mix well to combine. 3. Fold in chocolate chips if desired (we used Enjoy Life dairy free mega chunks). 4. Bake at 350*F for 40 minutes (or longer depending on your oven) - keep checking for a clean knife after inserting or look for ~195* internal temp. 5. ENJOY once cooled!
