Zucchini Cake Eggs Benedict
I love to order eggs benedict when eating out for breakfast. I usually have it over hashbrowns instead of on an English muffin. I don't usually make it at home because the Hollandaise sauce never turns out right (until I discovered this blender recipe).
Poach your eggs when your last set of Zucchini cakes are frying (for best results).

The Best Green Smoothie
What better first recipe post than my FAVORITE smoothie?? I have been drinking this smoothie every day for 2 weeks and it is not getting old. I tried a different smoothie two days ago and tossed it out, then made myself this one again. Here is what I put in my blender (in this order):
Nutrition Notes: 230 Calories, 5g Protein, 3g Fat, 44g Carbohydrates (12g Fiber, 20g Sugar), 525mg Potassium, More than the DV% Vitamin A &C, Fair amount of Calcium, and 9mg Iron!
