Greek Salad

Easy, Delicious, Nutritious... my take on the Greek salad.

Ingredients:
  • 1/2 pint (or more) halved grape tomatoes (or 2 diced regular tomatoes)
  • 1 cucumber - partially peeled and diced
  • 1 small red onion - sliced thin
  • 8oz sheep or goat milk Feta cheese
  • 1/2 cup olives
  • 2 tsp capers
  • Olive oil (drizzle)
  • Balsamic vinegar (again, drizzle)
  • 1-2 tsp Herbs de Provence 
  • Put over spring mix (or traditionally romaine lettuce - that is just never in my house)
